Modica, in south-east Sicily, is known for its distinctive, slightly grainy chocolate, made the traditional way. This panettone puts it centre stage: a soft, slow-leavened dough under a velvety chocolate glaze, finished with Modica chocolate crunchies. The 190g squeezer of Modica chocolate cream adds a rich, indulgent finish to every slice.
The dough rises slowly for 72 hours with a sourdough starter worked every day, giving the panettone its soft, delicate texture before it is glazed and finished with Modica chocolate.
Store in a cool, dry place.
Blanco Dolci began in 1986, when master baker Grandpa Rocco opened a small bakery in Niscemi, in the province of Caltanissetta in the heart of Sicily. His children and grandchildren grew it into an artisan workshop specialising in traditional Sicilian cakes and biscuits. Today the family still bakes every panettone with the same care and carefully chosen ingredients.
